It is determined based on the desired aromatic profile for each grape variety and cuvée, following a meticulous monitoring of phenolic maturity in our vineyard plots.

Vinification follows a natural process, guided by daily tastings, allowing us to minimize the use of additives only a slight addition of sulfur when necessary.

Our wines are bottled at their peak maturity; they can be enjoyed as soon as they are released but, with age, gain roundness and structure, revealing an even richer palette of flavors.
